I love to cook with kimchi, especially when it is ripe (aka funky).

Make it into a soup, or a savory pancake. Kimchi braised with pork belly is magic or fried with rice is simple but satisfying.

I also love it uncooked to maintain its probiotic benefits and toss it into noodles (see Sweet & Savory Kimchi Noodle Recipe)
